Chocolate Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Equipment

  • 9-inch round cake pans (2)
  • Parchment paper
  • Mixing bowls
  • Electric mixer
  • Cooling rack

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour cake pans.
  2. Mix dry ingredients in large bowl.
  3. Add eggs, milk, oil, and vanilla. Beat for 2 minutes.
  4. Stir in boiling water (batter will be thin).
  5. Pour into pans and bake 30-35 minutes.
  6. Cool in pans for 10 minutes, then transfer to racks.

Tips

  • Use room temperature ingredients
  • Don’t overmix the batter
  • Test doneness with toothpick
  • Let cool completely before frosting
