Ingredients:
2 Loaves of brioche Butter
For the custard:
4 egg yolks
1 cup heavy cream
1/4 cup dark brown sugar
1 tbsp vanilla paste
1 tsp cinnamon
1/2 tsp

ground nutmeg A splash of bourbon (optional)
Start by slicing the brioche into very thick slices the night before, and leaving them out overnight to dry out.
In a shallow dish, let the sliced brioche soak in the custard for about 30 seconds per side.
Fry in butter on a pan for a few minutes each side until golden.
Transfer to oven on a wire rack and bake for about 8-10 minutes at 400 degrees. This gives it the perfect texture.
Top with maple syrup, butter and some powdered sugar.
